• 6-8 green, orange, or yellow bell peppers
  • 1-2 pounds ground beef (to make it healthier, use ground turkey instead)
  • 1 slice white bread (I use Whitewheat, for the fiber content)
  • Salt to taste
  • Pepper to taste
  • Onion powder to taste
  • 1 medium white onion, chopped
  • 1 large egg
  • one large can of whole tomatoes

Cut the tops off the peppers and remove all the seeds and white stuff.
Mix together ground meat, onion, spices, and the egg (beaten), and tear the bread up into the mixture.
Mix all this together one last time, and stuff the mixture into the hollowed-out peppers.
If there is any meat left over, mold it into a loaf shape
Place peppers, open side up, into crock pot. Put meatloaf down in there too. Cover with the tomatoes.
Cover and cook on low for 10-12 hours. Sprinkle with fresh Parmesan cheese, if you want to.
